Wine Filtration
Wine is an alcoholic beverage fermented from fresh grapes or grape juice, typically classified into red wine and white wine.
Red wine is produced by fermenting grape juice together with skins, while white wine is generally produced by fermenting clarified grape juice.
The winemaking process mainly includes two stages: fermentation and aging. During fermentation, grape juice is converted into wine, while aging allows the wine to mature and develop its flavor profile.
Filtration plays a critical role in wine production, especially after fermentation.
During fermentation, yeast settles at the bottom of the tank, forming lees. If not properly removed, these sediments can affect the taste, clarity, and stability of the wine. Additionally, residual microorganisms and impurities may lead to instability during storage.
Even after clarification, filtration is still required to ensure product clarity, microbiological stability, and long shelf life.
The main filtration steps in wine production include:
- Clarification filtration: removes particulate impurities and suspended solids to improve clarity
- Pre-filtration: removes large particles and protects downstream filtration systems
- Terminal filtration: removes yeast, spores, and microorganisms to ensure microbiological stability
- Respirator: used for compressed air, nitrogen, CO₂, and other gases to remove moisture and particles, while balancing tank pressure and preventing contamination
